Raw Coconut Brownie
Ingredients for 4 people:
1 sweet potato, 100 gr of grated coconut, 50 g of ground almonds, 50 g of pure cocoa powder, 1 tsp of cinnamon powder, 1 tsp of vanilla essence, 2 tbsp of peanut butter, 2 tbsp of agave syrup , 1 pinch of salt.
Boil or steam the sweet potato. When done let cool and reserve.
Add the grated coconut, ground almonds, cocoa, cinnamon and salt into a bowl. Mix well.
Crush the sweet potato with a fork until there is a homogeneous purée.
Aplastar con un tenedor el boniato hasta que quede una masa homogénea.
Pour the sweet potato into the bowl and add the rest of the ingredients: vanilla, peanut butter and syrup. Mix all the ingredients with a spoon, kneading until consistent and homogeneous.
Let it cool in the refrigerator at least 3 hours.
Garnish with jam or raspberries.
