Ingredients (serves 4):
2 medium onions, 2 garlic, 1 red pepper, 1 green pepper, 2 carrots, 1 zucchini, 3 ripe tomatoes, 200 g of bulgur, ½ teaspoon of salt, ½ teaspoon of pepper, ½ teaspoon of paprika, ½ teaspoon of cinnamon powder, ½ teaspoon of ginger powder, ½ teaspoon of cardamom powder, 5 tablespoons of olive oil.
Peel the onions and garlic and chop them very finely. Sauté everything in a pan with the oil until golden brown.
Cut the rest of the vegetables into small cubes and sauté everything except the tomato for 5 minutes. After this time, toss the diced tomatoes, spices and sauté 3 more minutes. Add the bulgur and mix all the ingredients well.
Cover with boiling water and let simmer until all the water is absorbed.
Ingredients for the sauce:
1 garlic, ¼ teaspoon of salt, 300 ml of natural soy yogurt, 150 g of cucumber, 10 mint leaves.
Crush the garlic and toss it in the yogurt together with the salt, remove the pips from the cucumber and cut into thin slices and add it in the yogurt with the minced mint. Mix and serve together with the bulgur.
